M.A.P. is Modified Atmosphere Packaging, also known as gas flushing, protective atmosphere packaging or modified oxygen packaging. MAP is a technology that has been developed to ensure that ambient air concentrations be modified to maintain packaged food products fresh and attractive for the duration of the projected shelf life.

MAP是指氣調(diào)包裝技術(shù)。又稱之為氣體包裝或替換氧氣保鮮包裝技術(shù)。MAP是一種通過(guò)采用更換包裝內(nèi)部氣體濃度環(huán)境，對(duì)食品包裝進(jìn)行改良，使得食品在預(yù)計(jì)的保質(zhì)期內(nèi)保持新鮮與吸引力的一種技術(shù)。

Modifying the atmosphere?of a package provides fresh quality and minimally processed packaged food products to ensure a visual, textural and nutritional appeal. Controlling the internal environment of the packaged food product enables food packaging to provide an extended shelf life without requiring additional chemicals, preservatives or stabilizers.

更換包裝內(nèi)部的氣體濃度環(huán)境，可以提供新鮮優(yōu)質(zhì)，且使用少的加工程序的包裝食品。確保在視覺(jué)、質(zhì)感和營(yíng)養(yǎng)上有足夠的吸引力。控制包裝食品內(nèi)部氣體環(huán)境，來(lái)對(duì)食品提供一個(gè)更長(zhǎng)保質(zhì)期的包裝，而無(wú)需使用額外的化學(xué)品，防腐劑或穩(wěn)定劑等。

Modified Atmosphere Packaging?can be a blend of pure oxygen, carbon dioxide and nitrogen within a hermetically sealed package. Controlling this gaseous mixture helps to meet the specific respiration needs for each packaged food product, minimizing product degradation.

氣調(diào)包裝指可以將純氧、氮?dú)?、二氧化碳的混合氣體密封在包裝內(nèi)，根據(jù)每種包裝食品的呼吸需要，選擇控制不同濃度比例，以更好的減小產(chǎn)品的降解。

By altering the partial pressure of the existing headspace gas mixture, in a hermetically sealed package, to a specified gas concentration, will help preserve and extend the product’s shelf life.

通過(guò)改變現(xiàn)有頂空混合氣體的成分，在密封的包裝內(nèi)，達(dá)到適合的混合氣體濃度，這將有助于保持和延長(zhǎng)產(chǎn)品的保質(zhì)期。

If the package is not hermetically sealed (does not allow air to freely enter the package’s internal environment) decreasing the MAP gas efficiency) then, oxygen and relative humidity (RH) can initiate product degradation. Therefore, controlling the storage conditions throughout the supply chain is crucial for obtaining high quality product to the end-user.

如果包裝不是密封性包裝（不允許空氣的進(jìn)入但會(huì)降低MAP的氣體效率），那么氧氣和相對(duì)濕度將會(huì)導(dǎo)致產(chǎn)品的開(kāi)始降解。因此，控制整個(gè)供應(yīng)鏈的存儲(chǔ)條件對(duì)終用戶獲得高質(zhì)量產(chǎn)品至關(guān)重要。

In addition, off gassing by-products can cause further degradation, if the package’s headspace has not maintained a gaseous environment of Nitrogen or CO2, to stabilize the product’s flavor, appearance and taste after the end-user purchases and opens the package.

此外，如果包裝內(nèi)沒(méi)有使用二氧化碳和氮?dú)鈦?lái)維持頂空的氣體環(huán)境，來(lái)穩(wěn)定產(chǎn)品的風(fēng)味，包裝外觀和口味。脫氣產(chǎn)品將會(huì)在未來(lái)終用戶購(gòu)買(mǎi)和打開(kāi)包裝后開(kāi)始降解。
